There are plenty of big names in London’s hospitality scene, but Des Gunewardena is in a league of his own. You’ve probably heard his name before—he was one half of D&D London, the luxury restaurant group that made waves across the city. But now, Des has gone solo with his new venture, D3 Collective, and the Engel Bar and Jang restaurant at the Royal Exchange is his first project under this new chapter. And for the record I love this historic building and what Des has gone with it.
When we met at Engel and Jang, it was clear how much of himself Des has poured into this place. Everything—from the sleek menu to the music playlist and the table lamps—bears his personal touch. You can feel that this isn’t just another restaurant for him; it’s a passion project. The space itself is inviting and intimate, yet you can sense a bit of that signature London buzz that Des has always been great at capturing.

What struck me most was how grounded Des is. Despite his accomplishments, there’s nothing flashy or over-the-top about him. He’s sharp, thoughtful, and easy to talk to. It’s like sitting down with an old friend who just happens to have created one of London’s hottest new dining spots. Maybe that’s why his restaurants have always been so successful—they feel personal, like they’re made for people to enjoy, not just as a business.
This is just the beginning of what Des is cooking up under D3 Collective. There are plans at Olympia and if Engel and Jang are anything to go by, it’s going to be something special.
